Fried Bologna Sandwich

Fried Bologna Sandwich

This delicious sandwich tastes like nostalgia and summertime.

Ingredients
  

  • 1 lb thick cut bologna sliced
  • 1/2 lb American cheese sliced
  • 8 slices sourdough bread
  • Mayonnaise to taste
  • Honey mustard to taste
  • 1-2 romaine hearts chopped/shredded
  • BBQ Chips to taste

Instructions
 

  • Heat a few tablespoons of butter on a skillet until melted. Add slices of bologna and cook a few minutes on each side.
  • Stack the slices of bologna on top of each other in the skillet and add a couple slices of cheese on top. Cover the skillet with a lid for a couple minutes or until the cheese is melted.
  • Remove the bologna stack from skillet. Repeat these steps until you use up all your bologna.
  • Spread mayonnaise on one side of a slice of sourdough bread. Repeat on several slices of bread. Place the slices of bread mayonnaise side down on the hot skillet. Cook a few minutes until golden brown.
  • Remove bread from skillet. Take two slices of grilled bread and lay grilled side down. On the sides that have not been browned, add mayonnaise on one slice and honey mustard on the other slice. Spread evenly with a knife.
  • Now, assemble the sandwich.
    Start with the mayonnaise slice of bread on the bottom (mayonnaise side facing up). Carefully place stacks of bologna on top of bread. Top the cheesy bologna with chopped romaine lettuce. Place BBQ chips on top of the lettuce.
  • Next, gently push the other slice of bread (honey mustard side down) on top of the BBQ chips until slightly crushed.
  • Slice in half and enjoy!
