One Pot Polish Sausage & Vegetable Stew

This easy one pot dinner full of polish sausage and vegetables makes for a quick and comforting dinner!

Ingredients
  

  • 24 oz petite gold potatoes
  • 32 oz beef broth
  • 10 oz green beans
  • 1 onion
  • 1 (14.5 oz) can diced tomatoes
  • 13.5 oz polish sausage
  • A few slices bacon cooked and crumbled
  • Seasonings *to taste

Instructions
 

  • Quarter your petite gold potatoes and add them to a large pot or Dutch oven.
  • Pour a carton of beef broth over the potatoes and into the Dutch oven.
  • Add a package of green beans.
  • Dice an onion and add it to the pot.
  • Dump a can of tomatoes into the stew.
  • Slice the polish sausage into coin shapes and then slice the "coins" in half to make little half moons.
  • Add the polish sausage to the pot.
  • Crumble the bacon into the stew.
  • Stir everything together until well combined. Simmer on a gentle low boil for 30 minutes.
  • Season individual bowls to taste and enjoy!
