This easy one pot dinner full of polish sausage and vegetables makes for a quick and comforting dinner!
What You Will Need
Petite gold potatoes, beef broth, green beans, onion, diced tomatoes, polish sausage, bacon, and seasonings are the only ingredients you need for this simple recipe. This recipe can all be cooked in a large pot or Dutch oven. I cooked the bacon on a baking sheet in the oven before adding it to the stew.
Step by Step Instructions
Quarter your petite gold potatoes and add them to a large pot or Dutch oven.
Pour a carton of beef broth over the potatoes and into the Dutch oven.
Add a package of green beans.
Dice an onion and add it to the pot.
Dump a can of tomatoes into the stew.
Slice the polish sausage into coin shapes and then slice the “coins” in half to make little half moons.
Add the polish sausage to the pot.
Crumble the bacon into the stew.
Stir everything together until well combined. Simmer on a gentle low boil for 30 minutes.
Season individual bowls to taste and enjoy!
Tips & Advice
I highly recommend cooking this in a Dutch oven if you have one. It just cooks things like stew beautifully! Tramontina is my favorite brand.
I cook my bacon in the oven while I am slicing and dicing my vegetables and polish sausage. Cooking bacon in the oven is just easier and less messy to me! I cook it at 400 degrees and check on it every 5 minutes or so until it’s the crispiness I want.
