Ravioli Soup

A simple yet delicious one pot soup to warm your soul.

What You Will Need

Italian sausage, beef broth, tomato paste, ravioli, baby spinach, Italian seasoning, and parmesan cheese are the only ingredients you need for this simple recipe. You will need a large pot or Dutch Oven to cook the soup in.

Step by Step Instructions

In a large pot or Dutch Oven, brown Italian sausage until cooked through and no longer pink.

Pour in beef or vegetable broth.

Add tomato paste.

Dump in ravioli.

Add baby spinach.

Gently stir the soup and cover with a lid. Allow to simmer about 10-15 minutes until the baby spinach is wilted. Add Italian seasoning to taste and stir again until well combined.

Cooked Ravioli Soup

Serve immediately or simmer until ready to eat. Garnish individual bowls with shaved parmesan cheese. Enjoy!

Tips & Advice

I highly recommend you buy Italian sausage fresh (or as fresh as you can) from the meat counter at your grocery store as opposed to in a frozen tube. It tastes astronomically better and will add SO much more flavor to your soup than that stuff in a tube. It’s just a simple way you can make this soup taste even better!

I also highly recommend cooking this is in a Dutch oven if you have one. It just cooks things like soup beautifully! If you don’t have a Dutch oven, I highly recommend getting one. A Dutch oven changed my cooking life!

  • 1 lb Italian sausage
  • 2 cartons beef or vegetable broth
  • 1 (6 oz) can tomato paste
  • 20 oz ravioli
  • 5 oz baby spinach
  • Italian Seasoning *to taste
  • Shaved parmesan cheese *to taste

Instructions
 

  • In a large pot or Dutch Oven, brown Italian sausage until cooked through and no longer pink.
