Taco Soup

An incredibly easy “dump” recipe that is affordable and feeds a small army.

What You Will Need

Ground beef, diced tomatoes, Rotel™, tomato sauce, dark red kidney beans, black beans, light red kidney beans, pinto beans, corn, vegetable broth, taco seasoning, and ranch seasoning for this recipe. You will also need a large pot or Dutch Oven to cook the soup in on the stovetop.

Step by Step Instructions

Brown ground beef in a large pot or Dutch Oven until cooked through and no longer pink. Drain grease.

Dump in the diced tomatoes, Rotel™, tomato sauce, dark red kidney beans, black beans, light red kidney beans, pinto beans, and corn.

Taco Soup With Vegetables

Pour in the vegetable broth. Add the taco and ranch seasonings.

Stir together until well combined and simmer on low at least 30 minutes, up to a few hours.

Serve with optional toppings such as sour cream, shredded cheese, jalapenos, Fritos™, etc.

Tips & Advice

I highly recommend cooking this is in a Dutch oven if you have one. It just cooks things like soup beautifully! If you don’t have a Dutch oven, I highly recommend getting one. A Dutch oven changed my cooking life!

You could definitely add this all to a crockpot or slow cooker. Just be sure to brown the ground beef before adding it to the crockpot.

Feel free to use whatever broth you would like!

I like to buy Fritos Scoops™ to use as a spoon to eat this soup.

  • 1 lb ground beef
  • 1 can diced tomatoes
  • 1 can Rotel™

  • 2 packets taco seasoning
  • 1 packet ranch seasoning mix

  • Fritos™ *optional topping

Instructions
 

  • Brown ground beef in a large pot or Dutch Oven until cooked through and no longer pink. Drain grease.
