Cajun 15 Bean Soup

A simple way to spice up a bag of 15 bean soup. This is a cheap and easy way to feed a lot of mouths!

What You Will Need

15 bean soup, vegetable broth, andouille sausage, carrots, onions, celery, garlic, and Cajun seasoning are the only ingredients you need for this simple recipe! You will need a skillet to sauté the sausage, onions, and garlic. You will also need a large stockpot or Dutch oven to cook the soup in.

Step by Step Instructions

Soak dry beans in a large bowl of water for at least 8 hours.

After 8 hours, add vegetable broth to a large pot or Dutch oven and bring to a boil. Reduce to simmer and add the soaked and drained beans.

Simmer the beans on a low gentle boil for 1-2 hours.

Prepare andouille sausage and vegetables. Slice andouille sausage into coin shapes and chop onions, celery, and garlic. Add a tablespoon or two of olive oil to a skillet and heat on medium low. Sauté sausage with chopped onion and garlic for about 5-10 minutes, stirring occasionally.

Remove sausage, onion, and garlic and add them to your beans in the pot or Dutch oven.

Add chopped celery, carrots, and Cajun seasoning to the soup. Stir.

Cover and continue to let the soup simmer for at least 30 minutes to an hour. Serve and enjoy!

Tips & Advice

The reason for soaking dried beans is to remove the toxins that cause gas in your digestive system.

You can either buy Cajun style 15 bean soup which will come with a Cajun seasoning packet OR you can buy a regular 15 bean soup bag and add your own Cajun seasoning.

If you like spicy and buy a Cajun style 15 bean soup, use the included Cajun seasoning packet AND add Slap Ya Mama Cajun seasoning to your taste. You will want more heat than just the included packet.

I highly recommend cooking this in a Dutch oven if you have one. It just cooks things like soup beautifully!

I recommend using vegetable broth, but any broth (or even water) will work! I was actually out of vegetable broth when I cooked it this time so I just used water and added Better Than Bouillon roasted chicken base.

  • 1/2 onion to taste
  • 3 stalks celery
  • 2 TBSP minced garlic
  • Cajun seasoning to taste
