Kielbasa & Pineapple Bowls

A sweet taste of Hawaii, this meal is on the dinner table in less than 30 minutes from start to finish.

What You Will Need

Kielbasa, pineapple (and the juice!), brown sugar, red bell pepper, and white rice are the only ingredients you need for this simple recipe. You will need a skillet to sauté ingredients, a small saucepan to make the sweet sauce, and a rice cooker.

Step By Step Instructions

Prepare kielbasa and red bell pepper. Slice kielbasa into coin shapes and the red bell pepper into strips. Drain the pineapple, pouring the juice from the can into a small saucepan. Add a couple tablespoons of olive oil to a skillet and heat on medium heat. Add sliced kielbasa, red bell pepper, and drained pineapple to the skillet.

Fry for 10-15 minutes, stirring occasionally.

Meanwhile, prepare long grain white rice in a rice cooker according to package directions.

Add brown sugar to the pineapple juice in the small saucepan and whisk.

Pineapple Sauce

Heat on medium heat, stirring frequently until boiling. Once boiling, reduce heat to low and gently simmer until your kielbasa mixture is cooked.

Once kielbasa mixture is cooked, turn off both burners. Add the pineapple sauce to the kielbasa mixture in the skillet.

Let cool for 5-10 minutes. Serve over cooked rice. Enjoy!
