It looks completely unappetizing and to be frank, it might be to some. This is an authentic Hawaiian specialty of rice, eggs, a mystery meat, and gravy.
A few years ago, my family and I went off the beaten path while visiting the Big Island of Hawaii to a small local restaurant. I wanted something authentic that I couldn’t get anywhere else and alas, I was introduced to Loco Moco.
What You Will Need
White rice, eggs, Vienna sausage, brown gravy mix, and cream of chicken soup are the only ingredients you need for this simple and cheap meal.
Step by Step Instructions
Cook your rice according to package directions.
Make your eggs whatever style you want. I personally like my eggs scrambled but a fried egg is a more traditional choice.
To make your brown gravy, add a brown gravy packet, a can of cream of chicken soup, and half a can of water to a small saucepan on the stovetop. Simmer and whisk together until smooth and warm.
Warm up your Vienna sausage in the microwave or on the stovetop.
Now, assemble your plate.
Start with white rice.

Top the rice with Vienna sausage and eggs.

Finish it off by pouring brown gravy over it all.

Enjoy! Maybe…. this probably isn’t most people’s cup of tea, ahahahaha!
Tips & Advice
When I ate this Loco Moco at the restaurant, you could select how you wanted your eggs cooked and they had options of different meat to select. You could do Vienna sausage (what I picked), spam, or a hamburger patty. A hamburger patty is definitely the safer option but I wanted something more authentic which is why I picked Vienna sausage. Hey Shely, you’re right, it doesn’t look terribly appealing, but neither do photos of most stews and casseroles, no matter how delicious everyone knows they are. But this sounds intriguing, and like you, I always want to eat what the locals eat, especially if it isn’t anywhere else, so there’s a very good chance I would have ordered the same meal!
And if I ever get to Hawaii, by golly, I’m going to search for Loco Moco!
By this point in the trip I had already had so much fresh seafood and a PLETHERA of delicious fresh fruit (so fun how they sell coconut and lychee on the side of the road like we sell tomatoes and sweet corn), so I wanted something REALLY different and local. Jordan and I strongly oppose chain restaurants, especially on vacation! When we went to Mexico, we hopped in a taxi and told the cab driver to take us to a restaurant he recommended. So, he dropped us off at a restaurant and we had no idea where we were. Ahahahahahaha. It was great and the best food (way better than the food at our 5 star resort!) we had on the trip. Then we just wandered around until we found a cab to take us back to the resort. We had fun but most people probably think we are insane. Definitely willing to risk our lives for food, LOL!
