Cajun 15 Bean Soup
A simple way to spice up a bag of 15 bean soup. This is a cheap and easy way to feed a lot of mouths!

Cajun seasoning

Instructions
Soak dry beans in a large bowl of water for at least 8 hours.
After 8 hours, add vegetable broth to a large pot or Dutch oven and bring to a boil. Reduce to simmer and add the soaked and drained beans.
Simmer the beans on a low gentle boil for 1-2 hours.
Prepare andouille sausage and vegetables. Slice andouille sausage into coin shapes and chop onions, celery, and garlic.
Add a tablespoon or two of olive oil to a skillet and heat on medium low. Sauté sausage with chopped onion and garlic for about 5-10 minutes, stirring occasionally.
Remove sausage, onion, and garlic and add them to your beans in the pot or Dutch oven.
Add chopped celery, carrots, and Cajun seasoning to the soup. Stir.
Cover and continue to let the soup simmer for at least 30 minutes to an hour. Serve and enjoy!
