Cajun 15 Bean Soup

A simple way to spice up a bag of 15 bean soup. This is a cheap and easy way to feed a lot of mouths!

Ingredients
  

  • 1 (20 oz) bag Cajun 15 bean soup
  • 2 cartons vegetable broth
  • 12 oz Andouille sausage
  • 12 oz petite baby carrots
  • 1/2 onion to taste
  • 3 stalks celery
  • 2 TBSP minced garlic
  • Cajun seasoning to taste

Instructions
 

  • Soak dry beans in a large bowl of water for at least 8 hours.
  • After 8 hours, add vegetable broth to a large pot or Dutch oven and bring to a boil. Reduce to simmer and add the soaked and drained beans.
  • Simmer the beans on a low gentle boil for 1-2 hours.
  • Prepare andouille sausage and vegetables. Slice andouille sausage into coin shapes and chop onions, celery, and garlic.
  • Add a tablespoon or two of olive oil to a skillet and heat on medium low. Sauté sausage with chopped onion and garlic for about 5-10 minutes, stirring occasionally.
  • Remove sausage, onion, and garlic and add them to your beans in the pot or Dutch oven.
  • Add chopped celery, carrots, and Cajun seasoning to the soup. Stir.
  • Cover and continue to let the soup simmer for at least 30 minutes to an hour. Serve and enjoy!
