What You Will Need
Leftover mashed potatoes, cheese, vegetable oil, flour, sour cream, bacon, and green onion are the only ingredients you need for this simple recipe. You will also need a skillet for frying the patties in.
Step by Step Instructions
Add oil to a skillet and heat on medium.
Grab your leftover mashed potatoes.

Add a small handful of finely shredded cheese and stir in.

Grab a handful of mashed potatoes and form into a thin patty. Add to the hot oil in the skillet.

Cook 5-10 minutes and then flip.

Cook an additional 5-10 minutes. Remove patties from skillet. Repeat until all your mashed potatoes are used up.

Top with sour cream.

Crumble on bacon.

Sprinkle on green onion.

Enjoy!
Tips & Advice
You need enough oil to cover the bottom of the skillet, but not completely submerge the potato patties.
I coat my hands in flour before forming my potato patties so the mashed potatoes do not stick to my hands.
I cook my bacon in the oven while I am frying my potato patties. Cooking bacon in the oven is just easier and less messy to me! I cook it at 400 degrees and check on it every 5 minutes or so until it’s the crispiness I want.
If your mashed potatoes are too dry, try stirring in one egg at a time until you are easily able to form the mashed potatoes into patties.

Loaded Fried Mashed Potato Patties
Ingredients
- Leftover mashed potatoes
- 1 cup finely shredded cheddar cheese
- 1 cup(ish) vegetable oil *for frying
- Flour *for coating your hands
- Sour cream to taste
- 6 slices bacon
- Green onion to taste
