Taco Soup

An incredibly easy "dump" recipe that is affordable and feeds a small army.

Ingredients
  

  • 1 lb ground beef
  • 1 can diced tomatoes
  • 1 can Rotel™
  • 1 can tomato sauce
  • 1 can dark red kidney beans
  • 1 can black beans
  • 1 can light red kidney beans
  • 1 can pinto beans
  • 2 cans corn
  • 1 carton vegetable broth
  • 2 packets taco seasoning
  • 1 packet ranch seasoning mix
  • Sour Cream *optional topping
  • Shredded Cheese *optional topping
  • Jalapenos *optional topping
  • Fritos™ *optional topping

Instructions
 

  • Brown ground beef in a large pot or Dutch Oven until cooked through and no longer pink. Drain grease.
  • Dump in the diced tomatoes, Rotel™, tomato sauce, dark red kidney beans, black beans, light red kidney beans, pinto beans, and corn.
  • Pour in the vegetable broth. Add the taco and ranch seasonings.
  • Stir together until well combined and simmer on low at least 30 minutes, up to a few hours.
  • Serve with optional toppings such as sour cream, shredded cheese, jalapenos, Fritos™, etc.
