A hearty soup full of beef, vegetables, and macaroni. A perfect soup to warm your soul on a chilly day!
What You Will Need
Ground beef, macaroni pasta, diced onion, beef broth, tomato sauce, diced tomatoes, sliced celery, sliced carrots, oregano, basil, seasoned salt, and black pepper. You will cook this soup in a large pot or Dutch oven on the stovetop. If you don’t have a Dutch oven, I highly recommend getting one. A Dutch oven changed my cooking life!
Step By Step Instructions
Brown a pound of ground beef. Meanwhile, cook a box of macaroni pasta according to package directions. Once you ground beef is cooked, drain the grease and add in diced onion. Add as much or as little diced onion as you like. Cook onion a few minutes until translucent. Add an entire carton of beef broth.

Add a can of tomato sauce, a can of diced tomatoes, a couple stalks of chopped celery and 2 cups of sliced carrots. You can adjust the amounts of celery and carrots based on your taste.

Your macaroni pasta should be cooked by now. I cooked an entire box of macaroni pasta because I don’t like having partial boxes of pasta lying around, however we are only going to use 3 cups cooked macaroni. I added 3 heaping scoops of cooked and drained macaroni pasta to my soup. Personally, I then saved the leftover cooked macaroni to make macaroni and cheese later on for my child.

Season with a few dashes of oregano, basil, and seasoned salt. Adjust seasonings to your taste!

Let this soup simmer on low for at least 30 minutes to an hour. The great part about this soup is you could honestly let it simmer on low for hours, it won’t hurt anything!

And that’s it! I added black pepper to individual bowls. Enjoy!
Tips & Advice
You could easily turn this into a crockpot meal. You would need to brown your ground beef first, but then just add everything except the macaroni into your crockpot and cook on low for the day. Add in your uncooked macaroni about 30 minutes to an hour before serving and the macaroni should cook in the crockpot. You could also cook the macaroni separately and add to the crockpot.
I cheat and buy a 16 oz bag of “carrot chips” in the produce section for this recipe. Carrot chips at my grocery store are already sliced carrots. I use about half the bag for 2 cups of sliced carrots. Feel free to use any variation of carrot you want (baby, diced, etc.)!

Macaroni Soup
Ingredients
- 1 lb ground beef
- 3 cups cooked macaroni
- Diced onion to taste
- 1 carton beef broth
- 1 can tomato sauce

- Season with a few dashes of oregano, basil, and seasoned salt. Adjust to your taste.
- Simmer covered on low for at least 30 minutes to an hour. It can simmer for hours if you need.
- Top individual bowls with black pepper!
Notes
- Add as much or as little of the vegetables as you want!
- I use pre-sliced “carrot chips”. Feel free to use any variation of carrots you want (baby, diced, etc.).
- I recommend cooking this in a Dutch oven if you have one because they simmer soups beautifully, but a large pot will work as well.
- This could be done in the crockpot as well. Just brown your ground beef first and then add all the ingredients to the crockpot except the macaroni and cook on low for the day.
