This simple 3 ingredient “recipe” makes for a quick and delicious weeknight dinner. Serve along with dirty rice for a complete meal!
What You Will Need
Cajun style andouille smoked sausage, red bell pepper, and onion are the only ingredients you need for this recipe. I buy a box of dirty rice to prepare and serve along with the sausage and veggies! You will just need a skillet to cook the sausage and vegetables in (and a pot to cook the rice in if you choose!).
Step By Step Instructions
Start by preparing your dirty rice according to package directions.
While the rice is cooking, add a tablespoon or two of olive oil to a skillet and heat on medium low heat.
Slice your Cajun style andouille sausage into coin shape pieces. Add to the skillet.

Slice your red bell pepper into strips. Add to the skillet.

Slice an onion into strips. Add to skillet.

Sauté for about 10-15 minutes, stirring every couple minutes, until veggies are soft.

Serve along with your prepared dirty rice. Enjoy!
Tips & Advice
I had my “Slap Ya Mama” Cajun seasoning sitting on my counter for this meal. This is the first time I have bought Cajun style andouille smoked sausage as opposed to just regular andouille smoked sausage. When I sliced this Cajun style andouille smoked sausage, my eyes started watering and I knew the dish would have plenty of spice and flavor without me adding more to it. I was right and I am so glad I didn’t dump Slap Ya Mama seasoning on this dish like I usually do. If you use regular andouille smoked sausage, you will want to add seasonings!

Shelby, have you been rummaging through our refrigerator and cabinets???!? I bought a ring of Zatarain’s andouille smoked sausage a couple of weeks ago that’s been waiting to be used, we have leftover peppers from last weekend, and we have plenty of rice Cajun spices to make this.
