Cajun Sausage & Veggies Skillet

This simple 3 ingredient "recipe" makes for a quick and delicious weeknight dinner. Serve along with dirty rice for a complete meal!

Ingredients
  

  • 13 oz Cajun style andouille smoked sausage
  • 1 red bell pepper
  • 1 onion
  • 1 box dirty rice mix
  • Slap Ya Mama Cajun seasoning (optional)

Instructions
 

  • Start by preparing your dirty rice according to package directions.
  • While the rice is cooking, add a tablespoon or two of olive oil to a skillet and heat on medium low heat.
  • Slice your Cajun style andouille sausage into coin shape pieces. Add to the skillet.
  • Slice your red bell pepper into strips. Add to the skillet.
  • Slice an onion into strips. Add to skillet.
  • Sauté for about 10-15 minutes, stirring every couple minutes, until veggies are soft.
  • Serve along with your prepared dirty rice. Enjoy!
