Elotes

A classic authentic Mexican side dish. Corn smothered in cream, cheese, and seasonings. It's absolutely delicious!

Ingredients
  

  • 1/2 cup grated cotija cheese *Plus more to taste
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • Tajin™ *to taste
  • 1 tsp minced garlic
  • 4 ears corn *shucked
  • 1 lime

Instructions
 

  • In a wide and shallow bowl or platter, add grated cotija cheese, mayonnaise, sour cream, Tajin™, and minced garlic.
  • Stir together until well combined.
  • Refrigerate while you prepare your corn.
  • Cook your corn. You can either grill your corn, prepare it on the stovetop, or bake it in the oven.
  • Once the corn is cooked, remove the coating you made earlier from the fridge. Using a silicone brush or fork, spread a layer of the coating all over an ear of corn.
  • Sprinkle grated cotija cheese and Tajin™ all over the ear of corn, to taste.
  • Repeat until all ears of corn have been prepared with the coating and topped with grated cotija cheese and Tajin™. Cut up a lime to serve alongside the Elotes. Enjoy!

Notes

  • If the weather is nice, I like to grill my corn outside on the grill. If the weather is not so nice, I like to grill my corn inside over my gas burners.
