A classic authentic Mexican side dish. Corn smothered in cream, cheese, and seasonings. It’s absolutely delicious!
What You Will Need
Grated cotija cheese, mayonnaise, sour cream, Tajin™, minced garlic, shucked ears of corn, and lime are the only ingredients you need for this simple recipe. You will need a grill, stovetop, or oven to cook the corn.
Step by Step Instructions
In a wide and shallow bowl or platter, add grated cotija cheese, mayonnaise, sour cream, Tajin™, and minced garlic.
Stir together until well combined.
Refrigerate while you prepare your corn.
It’s cold here so rather than grilling my corn outside on the grill, I actually grilled the corn over my gas burners on the stovetop. You can either grill your corn, prepare it on the stovetop, or bake it in the oven. It just needs cooked.
Once the corn is cooked, remove the coating you made earlier from the fridge. Using a silicone brush or fork, spread a layer of the coating all over an ear of corn.
Sprinkle grated cotija cheese and Tajin™ all over the ear of corn, to taste.
Repeat until all ears of corn have been prepared with the coating and topped with grated cotija cheese and Tajin™. Cut up a lime to serve alongside the Elotes. Enjoy!
Tips & Advice
It doesn’t matter how you cook your corn (grill, stovetop, oven, etc.), it just needs cooked before spreading on the coating!
Squeeze lime onto the corn before eating.

Notes
- If the weather is nice, I like to grill my corn outside on the grill. If the weather is not so nice, I like to grill my corn inside over my gas burners.
