S'mores Popcorn Bars

S'mores Popcorn Bars

You get that S'mores taste PLUS popcorn in a bar form. Not nearly as messy as a true s'mores. It stores well in an airtight container so you can continually satisfy your s'mores craving without having to make one!

Ingredients
  

  • 1/4 cup butter
  • 1 (10.5 oz) bag mini marshmallows
  • 1/2 tsp vanilla
  • 1 (3 oz) bag popcorn
  • 2 cups Golden Grahams cereal
  • 1 cup mini chocolate chips

Instructions
 

  • Melt 1/4 cup butter in Dutch oven or large pot on stovetop until golden brown. Meanwhile, pop your bag of popcorn according to package directions and set aside for later.
  • Add in your bag of mini marshmallows to the melted butter and continue cooking on low heat and stirring constantly until marshmallows are melted.
  • Remove from heat.
  • Stir in 1/2 tsp of vanilla.
  • Carefully add in the entire bag of popped popcorn. *See Notes
  • Stir. Press into a lightly greased 9x13 Tupperware container.
  • Top with mini chocolate chips and gently press onto S'mores mixture.
  • Cut and serve!

Notes

  • I recommend Goodman's Original Vanilla Double Strength for vanilla. 
  • Do NOT dump bag of popcorn into mixture or else you risk adding unpopped kernels. Shake kernels down to the bottom of the bag and carefully add popcorn one handful at a time watching for unpopped kernels. 
  • You can form your mixture into popcorn balls instead of bars. Roll balls in mini chocolate chips. 
  • You can use Rice Krispies instead of popcorn.
