S'mores Popcorn Bars
You get that S'mores taste PLUS popcorn in a bar form. Not nearly as messy as a true s'mores. It stores well in an airtight container so you can continually satisfy your s'mores craving without having to make one!

- 1/4 cup butter
- 1 (10.5 oz) bag mini marshmallows
- 1/2 tsp vanilla
- 1 (3 oz) bag popcorn
- 2 cups Golden Grahams cereal
- 1 cup mini chocolate chips
Melt 1/4 cup butter in Dutch oven or large pot on stovetop until golden brown. Meanwhile, pop your bag of popcorn according to package directions and set aside for later.
Add in your bag of mini marshmallows to the melted butter and continue cooking on low heat and stirring constantly until marshmallows are melted.
Remove from heat.
Stir in 1/2 tsp of vanilla.
Carefully add in the entire bag of popped popcorn. *See Notes
Stir. Press into a lightly greased 9x13 Tupperware container.
Top with mini chocolate chips and gently press onto S'mores mixture.
Cut and serve!
- I recommend Goodman's Original Vanilla Double Strength for vanilla.
- Do NOT dump bag of popcorn into mixture or else you risk adding unpopped kernels. Shake kernels down to the bottom of the bag and carefully add popcorn one handful at a time watching for unpopped kernels.
- You can form your mixture into popcorn balls instead of bars. Roll balls in mini chocolate chips.
- You can use Rice Krispies instead of popcorn.
