S’mores Popcorn Bars

You get that S’mores taste PLUS popcorn in a bar form. Not nearly as messy as a true s’more. It stores well in an airtight container so you can continually satisfy your s’mores craving without having to make one!

What You Will Need

Butter, mini marshmallows, vanilla, popcorn, Golden Grahams cereal, and mini chocolate chips are the only ingredients you need! You will need a Dutch oven or large pot to melt and stir everything together and a microwave to pop popcorn. I also pressed my mix into a 9×13 Tupperware container.

Step by Step Instructions

Melt 1/4 cup butter in your Dutch oven or large pot on the stovetop on low and continue cooking until the butter turns golden brown, stirring occasionally.

Add in a bag of mini marshmallows and continue stirring until melted.

Turn off your heat and add in half a teaspoon of vanilla. Add in a bag of popped popcorn and Golden Grahams cereal.

Stir together and then press into a lightly greased 9×13 Tupperware container.

Top with mini chocolate chips. Cut into bars and serve. Enjoy!

Tips & Advice

A lot of people ask me what brand of vanilla I use. I highly recommend Goodman’s Original Vanilla Double Strength. The flavor is fantastic!

Goodman's Vanilla

The very first time I made this, I learned a very hard lesson. Do not, I repeat, do NOT just dump your popcorn bag out into your Dutch oven or stovetop after you pop your popcorn or else you will accidentally add unpopped kernels. Now when I make this, I actually dump my popcorn into a strainer and shake it around gently to try and get the kernels to fall to the bottom. Then, I very carefully add the popcorn one handful at a time to my Dutch oven to avoid adding any of those pesky unpopped kernels.

I pressed my s’mores popcorn mixture into a 9×13 baking pan and cut into bars because I thought my family would prefer it that way, but you could actually form your mixture into classic popcorn balls.

You could absolutely use Rice Krispies instead of popcorn to make s’mores Rice Krispies treats instead of popcorn bars. I just wanted to mix the texture up and try out popcorn instead!

Ingredients
  

  • 1/4 cup butter
  • 1 (10.5 oz) bag mini marshmallows
  • 1/2 tsp vanilla
  • 1 (3 oz) bag popcorn
  • 2 cups Golden Grahams cereal
  • 1 cup mini chocolate chips

Instructions
 

  • Melt 1/4 cup butter in Dutch oven or large pot on stovetop until golden brown. Meanwhile, pop your bag of popcorn according to package directions and set aside for later.
  • Add in your bag of mini marshmallows to the melted butter and continue cooking on low heat and stirring constantly until marshmallows are melted.
  • Remove from heat.
  • Stir in 1/2 tsp of vanilla.
  • Carefully add in the entire bag of popped popcorn. *See Notes
  • Stir. Press into a lightly greased 9×13 Tupperware container.
  • Top with mini chocolate chips and gently press onto S'mores mixture.
  • Cut and serve!

Notes

  • I recommend Goodman’s Original Vanilla Double Strength for vanilla. 
  • Do NOT dump bag of popcorn into mixture or else you risk adding unpopped kernels. Shake kernels down to the bottom of the bag and carefully add popcorn one handful at a time watching for unpopped kernels. 
  • You can form your mixture into popcorn balls instead of bars. Roll balls in mini chocolate chips. 
  • You can use Rice Krispies instead of popcorn.
