First, peel and dice potatoes.
Heat skillet on the stovetop on medium low heat and add a spoonful of butter to skillet to melt.
Put diced potatoes in a mixing bowl and pour in a couple tablespoons of olive oil and stir until the potatoes are coated in the oil.
Add diced potatoes into warm skillet making sure that the potatoes are in a single layer (not stacked on top of each other). Cook for about 15 minutes, stirring every 2 minutes, until potatoes are browned and cooked through.
Meanwhile, cook ground beef until no longer pink. Drain grease.
When the beef and potatoes are both done cooking, combine them together and season with taco seasoning.
Heat grill or grill pan on stovetop while you assemble your burritos.
Lay out a large flour tortilla and add two heaping spoonsful (about 1 cup) of beef and potato mixture.
Add a couple dollops of sour cream and nacho cheese.
Roll tortilla into a burrito.
Lay seam-side down in warm grill pan and cook a few minutes on both sides until golden brown.
Remove burrito and repeat assembling and grilling burritos until all the beef and potato filling is used. Enjoy!
