Whenever a restaurant gets rid of one of my favorite menu items, I just recreate it at home. Thankfully this one is incredibly simple!
What You Will Need
Potatoes, beef, taco seasoning, tortillas, sour cream, and nacho cheese are the only ingredients you need for this easy recipe. You will need pans or skillets to cook the beef and potatoes in and a grill or grill pan to grill the burritos on.
Step by Step Instructions
First, peel and dice the potatoes. Heat skillet on the stovetop on medium low heat and add a spoonful of butter to skillet to melt. Put diced potatoes in a mixing bowl and pour in a couple tablespoons of olive oil and stir until the potatoes are coated in the oil. Add diced potatoes into warm skillet making sure that the potatoes are in a single layer (not stacked on top of each other). Cook for about 15 minutes, stirring every 2 minutes, until potatoes are browned and cooked through.

Meanwhile, cook ground beef until no longer pink. Drain grease. When the beef and potatoes are both done cooking, combine them together and season with taco seasoning.

Heat grill or grill pan on stovetop while you assemble your burritos. Lay out a large flour tortilla and add two heaping spoonsful (about 1 cup) of beef and potato mixture.

Add a couple spoonsful of sour cream.

Top with a couple spoonsful of nacho cheese.

Roll tortilla up into a burrito.

Add the burrito to grill or grill pan and cook a few minutes on each side until golden brown.

Remove burrito and repeat assembling and grilling burritos until all the beef and potato filling is used. Enjoy!
Tips & Advice
Feel free to add additional toppings to the inside of your burrito! I add lettuce, tomatoes, and jalapenos to my husband’s.

Notes
- Feel free to add any additional toppings in your burrito that you want! I add tomatoes, lettuce, and jalapenos to my husband’s burritos.
