A spin on a classic pizza, using a tortilla for the crust instead!
What You Will Need
Chicken, tortillas, mozzarella cheese, buffalo sauce, ranch, seasonings, and butter are the only ingredients you need for this simple recipe! You will need a pan to cook your chicken (I use a grill pan!) and a large baking stone or pizza baking sheet to cook your “pizza” on.
Step By Step Instructions
Preheat oven to 400 degrees. Season chicken with seasonings. My favorite is McCormick “Grill Mates” Roasted Garlic & Herb Seasoning for chicken. Grill chicken until cooked through and no longer pink.

Slice and dice chicken into bite-sized pieces. Set aside.

Place extra large tortilla onto pizza baking stone or sheet (I greased my baking sheet with cooking spray). Melt butter and season melted butter with garlic powder. Brush melted garlic butter all over the top of the tortilla. Bake in the oven 3-5 minutes without any toppings on it. This is a pre-bake to ensure your pizza doesn’t end up soggy. Remove tortilla pizza from the oven. Brush buffalo sauce all over pizza.

Add cooked and diced chicken to pizza.

Top with shredded mozzarella cheese.

Place pizza back in the oven and bake 5-10 minutes, until your cheese is melted and the edges of your “pizza” (the tortilla) is a light golden brown. You can broil to get your cheese extra gooey, but keep a VERY close eye on your pizza to you don’t burn the edges. Ask me how I know.
Drizzle more buffalo sauce and ranch on top of pizza. Cut with a pizza cutter and serve. Enjoy!
Tips & Advice
I found extra large burrito flour tortillas which are huge and the diameter of a large pizza. You can absolutely use any size tortilla you want and do multiple pizzas if necessary.
I do not own an air fryer, but I imagine this would work great in an air fryer for a quick snack (depending on how large of a tortilla you can fit in your air fryer). Just an idea for you!
I have NOT tried this with low-carb tortillas, but theoretically they should work as well if you are looking for a lower-carb alternative!
You could absolutely use a rotisserie chicken for an even easier way to make this recipe.
I highly recommend buying a block of mozzarella cheese and shredding the cheese yourself as opposed to buying pre-shredded cheese. This is just a simple thing you can do to make this recipe taste even better!

Buffalo Chicken Tortilla Pizza
Ingredients
- 1 pound chicken breast
- Roasted Garlic & Herb Chicken Seasoning to taste
- 1 Extra Grande burrito flour tortilla
- 2 TBSP melted butter (approximately)
- A few dashes garlic powder to taste
- 12 oz buffalo wing sauce
- 6 oz mozzarella cheese, shredded (about 1 1/2 cups)
- Ranch to taste
Instructions

- Grill chicken until cooked through and no longer pink.
- Slice and dice chicken into bite-sized pieces and set aside.
- Place extra large tortilla onto pizza baking stone or greased baking sheet.
- Melt butter and season melted butter with garlic powder.
- Brush melted garlic butter all over the top of the tortilla.
- Bake in the oven 3-5 minutes without any toppings on it.
- Remove pizza from the oven and brush the top of the tortilla all over with buffalo sauce, leaving a space between the sauce and the edge of the tortilla so you have a "crust" (optional).
- Top the buffalo sauce with the diced chicken.
- Top with shredded mozzarella cheese.
- Place pizza back in the oven and bake 5-10 minutes, until your cheese is melted and the edge of your "pizza" (the tortilla) is a light golden brown.
- Drizzle more buffalo sauce and ranch on top of pizza. Cut with a pizza cutter and serve. Enjoy!
