Using pancake mix and your favorite toppings to make muffins.
I feel a bit silly sharing this because it’s not particularly a “recipe” per say, but more of an easy breakfast idea for you! It’s such a fun thing to make with young children. Also, it’s a cheap and simple way to feed a lot of people for breakfast.
What You Will Need
Pancake mix, water, syrup, chocolate chips, blueberries, sprinkles, and brown sugar are the only ingredients you need for this simple “recipe”. You will need a muffin pan to bake the muffins in.
Step by Step Instructions
Preheat oven to 375 degrees. Mix 2 cups of your pancake mix according to package directions. I did about 1 1/4 cup water and added a few tablespoons of syrup. Adjust until you can whisk and get a smooth consistency. Fill up greased muffin pan about 3/4 of the way full with mixed pancake mix.

Top pancake muffins with your favorite pancake toppings. We did a different topping on each row. Row 1 we did blueberries.

The next row we did chocolate chips.

For the next row we did sprinkles.

And for the last row we did brown sugar.

Bake 15-20 minutes or until the top of the muffins just start to turn golden brown. You should be able to insert and remove a toothpick without any batter sticking to it.

Wait until the pan has cooled and then carefully remove and serve. Enjoy!
Tips & Advice
I buy pancake mix that only needs water added to make things even easier. Some pancake mixes require additional ingredients to be added so be mindful of which pancake mix you select.

Pancake Muffins

Instructions
