Pancake Muffins

Using pancake mix and your favorite toppings to make muffins.

Ingredients
  

  • 2 cups pancake mix
  • 1 1/4 cup water
  • 3 TBSP syrup (plus additional to serve with)
  • Blueberries (optional topping)
  • Chocolate chips (optional topping)
  • Sprinkles (optional topping)
  • Brown Sugar (optional topping)

Instructions
 

  • Preheat oven to 375 degrees.
  • Mix 2 cups of your pancake mix according to package directions. I did about 1 1/4 cup water and added a few tablespoons of syrup. Adjust until you can whisk and get a smooth consistency.
  • Fill up greased muffin pan about 3/4 of the way full with mixed pancake mix.
  • Add whatever toppings you would like to your pancake muffins. We did a different topping on each row. Blueberries, chocolate chips, sprinkles, and brown sugar.
  • Bake 15-20 minutes or until the top of the muffins just start to turn golden brown. You should be able to insert and remove a toothpick without any batter sticking to it.
  • Wait until the pan has cooled and then carefully remove and serve. Eat as is or serve with syrup. Enjoy!

Notes

  • I buy pancake mix that only needs water added. Some pancake mixes require additional ingredients to be added so be mindful of which pancake mix you select.
