Preheat oven to 375 degrees.
Mix 2 cups of your pancake mix according to package directions. I did about 1 1/4 cup water and added a few tablespoons of syrup. Adjust until you can whisk and get a smooth consistency.
Fill up greased muffin pan about 3/4 of the way full with mixed pancake mix.
Add whatever toppings you would like to your pancake muffins. We did a different topping on each row. Blueberries, chocolate chips, sprinkles, and brown sugar.
Bake 15-20 minutes or until the top of the muffins just start to turn golden brown. You should be able to insert and remove a toothpick without any batter sticking to it.
Wait until the pan has cooled and then carefully remove and serve. Eat as is or serve with syrup. Enjoy!
