Pot roast with a kick to it. The kick can be as big or as little as you like. Either which way, this is an incredibly easy crockpot recipe that results in pure comfort food.
What You Will Need
Chuck roast, butter, au jus gravy mix, ranch seasoning, and pepperoncini peppers are the only ingredients you need for this simple recipe. You will also need a crockpot (aka a slow cooker) to cook this pot roast in.
Step by Step Instructions
Place chuck roast in a crockpot.
Add butter.
Sprinkle on au jus gravy mix and ranch seasoning.
Add as many (or as little) pepperoncini peppers as you would like. Pour in a few splashes of pepperoncini juice from the jar (or more or less, depending on your taste buds). The more pepper and juice you add, the spicier the pot roast will be.
Cook on low for the day, at least 8 hours, until the meat falls off the bone and easily shreds.
Remove any bones and excess pieces of fat. Shred the beef using two forks.
Serve and enjoy! I recommend serving alongside mashed potatoes and a vegetable (green beans is my top choice!).
Tips & Advice
The best part about this recipe, is using the leftovers the next night (or two) for easy dinners! I always make sandwiches the next night using the meat. I add the pot roast onto hoagie rolls, top with sliced provolone cheese, and toast them in the oven.
You can also use leftover pot roast to make yummy birria tacos.
