Simple Cheesy Ham & Potato Casserole

This is a recipe for when you are hungry for cheesy ham and potatoes, but don’t have the time or energy to make it from scratch. This simple recipe will satisfy your craving! The best part is you can use this recipe for dinner, breakfast, or as a side dish.

What You Will Need

Frozen diced potatoes, cream of chicken soup, sour cream, cheddar cheese, onion, ham, butter, salt, pepper, and some crispy fried onions as an optional topping. Wow, all of that in casserole form… does it get any more Midwestern than that? You will also need a 9×13 baking pan to bake this casserole in the oven.

Step By Step Instructions

Preheat the oven to 350 degrees. In a large mixing bowl add in your frozen diced potatoes (slightly thawed), 2 cans cream of chicken soup, and two cups of sour cream.

Sour Cream

Add 2 cups shredded cheddar cheese, diced onion (as much or as little as you want), and a package of cubed ham.

Ham

Add one stick of melted butter, a few dashes of salt, and a few dashes of pepper. Stir until well combined.

Mixed Together

Spread into a greased (sprayed with cooking spray) 9×13 baking dish.

Spread in Casserole Dish

Bake at 350 degrees for 45 minutes or until cooked through *oven times vary*.

Don’t forget to top individual servings with crispy fried onions!

Tips & Advice

Set your bag of frozen diced potatoes on the counter for a little bit before cooking. They will stir and mix better with everything if they are slightly thawed rather than big frozen chunks.

I highly recommend buying a block of cheddar cheese and shredding the cheese yourself rather than buying a package of pre-shredded cheddar cheese. It’s such a simple thing to do to make this taste even better!

I like to top individual servings with crispy fried onions (you can find these in the pantry section of your grocery store) but you could also top with crushed cornflakes to still get that crunch if you don’t care for fried onions. I was nervous to top my entire casserole with fried onions or cornflakes because we always have leftovers for my small family and I didn’t want the crunchy texture to get soggy sitting in the fridge.

This recipe can be made for dinner OR breakfast. Add in chopped broccoli if you want. Omit the ham and it becomes a side dish! This recipe is extremely versatile.
