Simple Cheesy Ham & Potato Casserole
This is a recipe for when you are hungry for cheesy ham and potatoes, but don't have the time or energy to make it from scratch. This simple recipe will satisfy your craving!

- 32 oz bag frozen diced potatoes
- 2 (10.5 oz) cans cream of chicken soup
- 2 cups sour cream
- 2 cups shredded cheddar cheese
- Diced onion to taste
- 1 (16 oz) package cubed ham
- 1 stick butter, melted
- A few dashes salt
- A few dashes pepper
- Crispy fried onions (optional topping)
Preheat oven to 350 degrees
Combine potatoes, both cans cream of chicken soup, sour cream, shredded cheddar cheese, diced onion (as much or as little as you want), cubed ham, melted butter, salt, and pepper in a large mixing bowl. Stir until well combined.
Spread into greased 9x13 baking dish.
Bake at 350 degrees for about 45 minutes or until cooked through *oven times vary*. Optional- top individual servings with crispy fried onions.
- Set your bag of frozen diced potatoes on the counter for a little bit before cooking to make it easier to mix with the other ingredients.
- I highly recommend buying a block of cheddar cheese and shredding the cheese yourself rather than buying a package of pre-shredded cheddar cheese.
- I like to top individual servings with crispy fried onions but you could also top with crushed cornflakes to still get that crunch if you don't care for fried onions.
- This recipe can be made for dinner OR breakfast. Add in chopped broccoli if you want. Omit the ham and it becomes a side dish.
