A copycat of a favorite at a major fast-food chain, except in casserole form.
What You Will Need
White corn tortillas, refried beans, ground beef, enchilada sauce, shredded cheese, tomatoes, onion, and green onion are the only ingredients you need for this simple recipe. You will need vegetable or canola oil and a frying pan to fry the tortillas in. You will also need a 9×13 baking dish to put the casserole in and bake in the oven.
Step by Step Instructions
Preheat your oven to 350 degrees.
Work on cooking your ground beef in a skillet until no longer pink.
While the ground beef is browning, add your vegetable or canola oil to a frying pan and fry your tortillas a couple minutes until crispy. Set your crispy tortillas off to the side.
Once the ground beef is cooked, drain the grease. Add a few tablespoons of water to your beef and your taco seasoning packet and stir together until well combined.
Now it’s time to assemble the casserole.
First, add a bottom layer of half your fried tortillas. Feel free to break them up so they fit your casserole dish better.

Spread a layer of refried beans over the fried tortillas.

Layer your taco seasoned cooked ground beef over the refried beans.
Pour about half of the enchilada sauce over the beef.

Add the other half of the fried tortillas on top of the ground beef and enchilada sauce.
Sprinkle the shredded cheese over the fried tortillas.
Add diced onions and tomatoes.

Bake in the oven for 20 minutes at 350.
Top with chopped green onion.

Slice into individual squares, serve, and enjoy! Top individual plates with additional toppings like sour cream, jalapenos, etc.
Tips & Advice
I highly recommend shredding a block of cheese as opposed to buying pre-shredded cheese. This is a simple thing you can do to make this recipe taste even better! Use whatever kind of cheese you would like. I used Colby Jack because it’s what I had on hand.
