Course Dinner
Cuisine Tex-Mex

Ingredients

  • 12 white corn tortillas
  • 31 oz can refried beans
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1-2 cans enchilada sauce *to taste
  • 8 oz cheese (of choice!) *shredded
  • 1 tomato *diced
  • 1 onion *diced
  • 1 bundle green onion *chopped
  • Oil *for frying

Instructions

  • Preheat your oven to 350 degrees.
  • Work on cooking your ground beef in a skillet until no longer pink.
  • While the ground beef is browning, add your vegetable or canola oil to a frying pan and fry your tortillas a couple minutes until crispy. Set your crispy tortillas off to the side.
  • Once the ground beef is cooked, drain the grease. Add a few tablespoons of water to your beef and your taco seasoning packet and stir together until well combined.
  • Now it's time to assemble the casserole.
  • First, add a bottom layer of half your fried tortillas. Feel free to break them up so they fit your casserole dish better.
  • Spread a layer of refried beans over the fried tortillas.
  • Layer your taco seasoned cooked ground beef over the refried beans.
  • Pour about half of the enchilada sauce over the beef.
  • Add the other half of the fried tortillas on top of the ground beef and enchilada sauce.
  • Sprinkle the shredded cheese over the fried tortillas.
  • Add diced onions and tomatoes.
  • Bake in the oven for 20 minutes at 350.
  • Top with chopped green onion.
  • Slice into individual squares, serve, and enjoy! Top individual plates with additional toppings like sour cream, jalapenos, etc.
