Crockpot Cajun Chicken & Sausage Alfredo

Chicken and andouille sausage with pasta and a creamy alfredo sauce with a Cajun kick make for this incredibly delicious and easy recipe. Did I mention it's made in the crockpot?

Ingredients
  

  • 1 lb chicken breast
  • Salt to taste
  • Black pepper to taste
  • Garlic powder to taste
  • 13 oz andouille sausage
  • 2 3/4 cup heavy whipping cream
  • 3 3/4 cup chicken broth
  • 4 TBSP butter
  • Cajun seasoning to taste
  • 2 tsp minced garlic cloves
  • 1 lb penne
  • 1 red bell pepper
  • 8 oz parmesan cheese, shaved *See notes

Instructions
 

  • Place chicken breasts in the crockpot and season with salt, pepper, and garlic powder to taste.
  • Slice andouille sausage into "coin" shapes and add to crockpot.
  • Add heavy whipping cream, chicken broth, butter, Cajun seasoning, and minced garlic.
  • Cook on low 4-6 hours or high 2-3 hours.
  • Remove chicken and add penne pasta.
  • Slice your red bell pepper into strips and add to crockpot. Stir.
  • Cook on high for 30 minutes.
  • While that's cooking, shred your chicken with two forks.
  • Once penne is tender, sprinkle in your parmesan cheese. Stir.
  • Add shredded chicken. Stir until well combined.
  • Serve & enjoy!

Notes

  • I actually prefer to use a "Tuscan Blend" of shaved parmesan and fontina cheese.
