Simple Breakfast Bowls

Less of a recipe, more of a guide for a simple breakfast idea- breakfast bowls! I’ll share what I like in my breakfast bowl, but you add your favorite things in yours. I love building bowls like this because each individual person you are cooking for can customize their bowl to their taste!

What You Will Need

Diced potatoes, eggs, breakfast sausage, bell peppers, shredded cheese, and sour cream make up my breakfast bowl. It’s a bit all hands on deck when I make this because I have all 4 burners on my stove going. One to cook potatoes, one to sauté the bell peppers, one to cook and scramble the eggs, and one to cook and crumble the breakfast sausage. You will need pots and skillets to cook these things in.

Step By Step Instructions

Go ahead and cook your frozen diced potatoes according to package directions. Meanwhile, work on sautéing sliced green and red bell peppers, cooking scrambled eggs, and cooking breakfast sausage. There’s a lot going on on your stovetop at once but it really doesn’t take long and it’s easy things we are cooking. I season the bell peppers with garlic pepper and the potatoes and eggs with salt and pepper. Once everything is cooked, we will assemble the bowls.

First, add cooked and seasoned diced potatoes.

Add seasoned scrambled eggs.

Add cooked and crumbled breakfast sausage.

Add sautéed bell peppers.

Add shredded Colby Jack cheese.

Top with sour cream and enjoy!

Tips & Advice

I highly recommend buying a block of Colby Jack cheese and shredding it yourself rather than buying pre-shredded cheese. It’s just a simple thing you can do to make your breakfast bowl taste even better!

Ingredients
  

  • 1 (32 oz) bag frozen diced potatoes
  • 1 dozen eggs, scrambled
  • 1 lb breakfast sausage
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 cups shredded Colby Jack cheese
  • Sour cream to taste
  • Garlic pepper to taste
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • First, cook your frozen diced potatoes according to package directions. While that is cooking sauté your sliced bell pepper, cook and scramble your eggs, and cook and crumble your sausage.
  • Once everything is cooked, season accordingly with garlic pepper, salt, and black pepper to taste.
  • Assemble bowls. The layers should be: Diced potatoes, scrambled eggs, breakfast sausage, sliced bell pepper, shredded cheese, and sour cream. Enjoy!

Notes

  • I highly recommend buying a block of Colby Jack cheese and shredding it yourself as opposed to buying pre-shredded cheese. 
  • I love building bowls like this because each person you are feeding can customize their bowl to fit their taste! 
  • Use this as a guide, but use whatever ingredients you would like best in YOUR personal breakfast bowl.
